Le capacit\u00e0 di sequestro degli ioni calcio e magnesio sono decisamente superiori a quelle dell'EDTA classico.<\/p>\n
Il suo eccellente potere sequestrante, particolarmente evidente a pH alcalino, si mantiene anche a temperature elevate.<\/p>\n
Nella sbozzatura, nella purga e nel candeggio facilita l'eliminazione di pezzature, cere e pectine.<\/p>\n
